Apricot Coconut Ice Cream

What’s a girl to do with so many apricots?  Well, plenty of them are in the freezer ready for future cobblers.  And the final little seeded batch went into some ice cream.

I’m sure your family is like ours… we have quite the variety of food allergies and sensitivities.  I thought I’d try my hand at some non-dairy ice cream.  You know me!  I’m not about to search for a recipe when I can have some fun experimenting.

I remembered how interesting the texture was when I absent-mindedly used cherry Jello instead of cherry Koolaid last summer… so that’s how I got one of my ingredients today.  And when I reached into the pantry to pull out some sugar, I saw a jar of honey… so that’s how I got another one.

Here’s my concoction:

2 Cups Apricots (whirred up in the food processor)

3 Cups Coconut Milk

1 Box Apricot Jello

1 Cup Honey

 

Honey has never been one of my favorite flavors, but it just seemed to go with this theme.  I find the results to be quite refreshing.  Kind of like a sorbet with lots of fun texture.

This isn’t one of my recipes that I implore you to try.  I doubt I’ll ever make it again myself.  (If I do, I’ll use sugar!)  But it gave me the chance to have some fun, make something yummy, try something new.  Have you made any interesting ice cream combinations lately?

Post Script:  Day two, having second helping.  You know… I’m beginning to love this stuff!  Probably will make another batch, probably will use honey… but I think just half a cup.

    Looks so pretty! Do you think it would firm up without the Jello? Just curious. I’m not much of an experimenter without at least using PART of a recipe. I love seeing your bravery to experiment!

    Yes, I think it would firm up without it. It was just a fun ingredient I had in the pantry, but I don’t think I’d even use it next time. It’s really like a happy sorbet!
