Potato Salad

I would love to give credit to the person who wrote this, but I have no clue.  I saw it years ago on a friend’s refrigerator.  Loved it and never forgot it.  It was a list of guidelines for mothers-in-law.  They were sweet little practical things… and then the finale… “Always remember, there is more than one way to make a potato salad.”

Isn’t that great?  We can all get wrapped up in the “right way” to do things, and hand out way too much advice.

Well, that being said, I shall now share with you my sister’s incredible potato salad recipe.  Take my advice and give this a try!

Boil potatoes in salted water until they’re the consistency you like for potato salad.  New potatoes with the skins still on, and cut into bite sized pieces… that’s the best!

Now for the two other ingredients.  Real mayonnaise.  She swears by Hellman’s.  And dill.  She can get fresh dill in the market.  Out here in my small town, I have to settle for dried dill in a jar.

That’s it.  Sorry.  You know me… not good at giving you exact amounts.  But be generous with the dill.  You’ll be amazed at this incredibly delicious recipe.


Post Script:  Oh my goodness!  My sister chimes in with a comment that she adds a stick of butter while the potatoes are cooling.  How could I have overlooked this?  Can’t wait to make it with this over-the-top ingredient added!

    I might just add, I also put a stick of butter onto the potatoes while they are cooling! 🙂

    What in the sam hill?? I have never done the butter. How could I have forgotten about this favorite ingredient of mine?

    Funny…I developed my potato salad recipe years ago when I was asked to bring potato salad to a function (way before Brie was born!). I never liked potato salad so this was a very hard assignment. But, I came up with something that I actually DID like….and while the potatoes are cooling an essential element is that slab of butter melting over them! Oh, and for the record, I also LOVE Kim’s potato salad. So fresh tasting.

    Just 3 ingredients?? And then add butter. I like the butter part. I do sour cream too. And onion, and mustard, and and balsamic vinegar, and bacon. Other than that, they are the same. Oh, and salt and pepper. Oh forgot the eggs.
