Raspberry Cheesecake Ice Cream

Oh my goodness!  Oh my goodness!  Oh my goodness!  This may be the best.  The absolute best!

You know by now that I can’t follow a recipe.  Today I have used the basic buttermilk ice cream recipe, but made it work with what was in the fridge.  We’ve had parties going on here, served up lots of coffee, needed lots of half-n-half on hand.  G made buttermilk biscuits for a friend who came for our class reunion, so we also had buttermilk that needed to be used.  I think this is what I came up with for today’s ice cream…

2 Cups buttermilk

1 Cup heavy cream

2 Cups half-n-half

2 Cups sugar  (Next time I would cut that back.. but I really like things tart.)

1 Tbsp raspberry extract

It’s fantastic.  It’s going in the Cuisinart as I type… and I’ve been sampling.  (A fun bonus with this machine… the top is open, and you can stick a spoon down in it while it spins!)

Oh… that reminds me.  They sell my favorite ice cream maker at Cabela’s.  Just type in “Cuisinart Ice Cream” in the Cabela’s search box and you’ll go right to it.  (Right now it’s on sale!)

    Hee hee! I had 5 grapes and 3 cheese cubes for supper just so I could really enjoy my little cup of ice cream. Funny thing… I really don’t have a sweet tooth, and can easily turn down desserts… but I can NEVER say no to home made ice cream!

    I sure do love the little Cuisinart for all the batches I’ve been making. Everyone knows I’m not a “gadget” person… but this little jewel keeps me smiling!
