Red Velvet Cake Icing

Thinking I’d better share my mother-in-law’s icing recipe with you.

Two things…

One:  I LOVE cream cheese.   You can’t go wrong with cream cheese on anything… unless you’re thinking of putting a cream cheese icing on a red velvet cake.   Here I would have to argue with you.  Just like the way you eat French toast, some foods must have rules!

Two:  I think everything that can have butter in it should have butter in it.  And I have a recipe for butter in this icing.  However, my mother-in-law doesn’t use butter in her recipe, and since this is the best red velvet in the world, I’m going to have to go along with whatever this recipe says.

So, there you have it.  The one and only time I will claim that butter and cream cheese have no place in a recipe.  Also, my other recipe makes a to-do about beating this until it’s fluffy, and her recipe just says to “blend”.   I’ll give you her recipe, but I’ll add my two cents and recommend that you make a beating out of that blending.

Here we go:

1 cup whole milk

1/4 cup flour

1 tsp salt

Cook a thick sauce of these ingredients and keep stirring as it cools.

Blend:

1 cup sugar

1 cup Crisco

1 tsp vanilla

Add the thick sauce and spread on the cake.

    This is the ONLY kind of icing we’ve ever put on our Red Velvet cakes! Except for one time when Colton was little – he wanted a red velvet cake with chocolate icing! Can you imagine? I always thought that was a waste of a good red velvet cake, but he loved it! But I’m with you 100%! I love cream cheese frosting as well, but on Red Velvet, this is the only way to go!
