Strawberry Banana Cake

What a happy springtime cake.  Oh you can bet… memories attached!

When I was in the 7th grade, I made some Double Chocolate Pudding Cookies for the cookie bake-off, earning myself a spot in the cake bake-off.  The cake bake-off didn’t go so well.

I had practiced this cake and had it down to perfection.  It was so delicious, I was sure of victory!  But the presentation turned disastrous when I got the cream cheese frosting too loose.  As I tried to layer that cake and add in my sliced bananas, they just kept sliding out between the layers and down the side of the cake.  I’d try my best to scoop them back up and tuck them back in, but here they’d come again.

It wouldn’t have even become a lasting memory if not for the 8th grade boys who had somehow found themselves in a Home-Ec class, and were serving as the audience for the cake bake-off that hour.  They all began to snicker, and I’m sure my mortified face was far more red than the strawberries in my icing!

This is where the tale turns sweeter than the cake itself.  The next day we were working away in Geography class when there was a knock at the door and it was for me.  There stood the laughing culprits with a flower in a vase, along with a card of apology.  Pansy Jordan, that kind Home-Economics teacher, had seen to it.

Hats off to all wonderful teachers, especially those who taught me at PJHS and PHS.  What wonderful life lessons you were passing on to all of us… along with reading, writing and ‘rithmetics.


Strawberry Banana Cake

1 Cup Sugar

1 Box Strawberry Banana Jello

Mix well and add

3 Eggs (beating well after each one)

½ Cup Milk

½ Cup Oil

8 Ounces Frozen Strawberries in Syrup

2 Cups Sifted Flour

1 Tbsp Baking Powder

1 Tsp Salt

Bake in 2, 9” layer cake pans at 350 for 25-30 minutes.

Now for the tricky frosting.  In true fashion, when I made the cake recently, I added too much of the frozen strawberry concoction and had more of a glaze than a frosting.  Regardless… delicious!  Just use:

Cream Cheese

Powdered Sugar

Frozen Strawberries in Syrup

Sliced Bananas between the layers if you’d like.

(I realize this isn’t really a recipe… but we all know how to mix these things up to our liking!)

    Sweet memories for you both! What an observant teacher! And boys with the proper respect for their teacher/adult. Wish I had a slice of your cake even with runny icing. Not fitting in my eating plan right now though.:(

    Thanks for the memories of the bake off. I remember sifting the flour just so and measuring it so exact…smoothing off the measuring cup sp precise. Fun times.

    I have fond memories of Mrs. Jordan also. We had a rather loud, quite unruly group of girls in our class. Mrs. Jordan spent alot of her time “managing” them. At the end of the year I got a little note in the mail complimenting me and apologizing for not being able to spend as much time with others of us in the class. She didn’t want me to feel “overlooked”. I will never forget how special she made me feel!!
